ho has the best barbecue? Could be Texas, or possibly Memphis. Many would argue that it must be Kansas City. My personal vote is for right here in the Lowcountry and it’s definitely Bluffton BBQ.
Fortunately, you get to decide for yourself. For all of us who have waited for Ted Huffman’s new restaurant to open....the wait is over! Bluffton BBQ is located on State of Mind Way in the Promenade of historic old-town Bluffton.
The key to the best and most tender flavor and texture in cooking is an even source of heat. Ted Huffman, owner of Bluffton BBQ believes that “low and slow” is the way to go and you won’t find anyone who disagrees. Ted has won numerous awards including Best Ribs and Best Pulled Pork. Years of cooking pork has taught Ted the secret of doing just the right thing at just the right time. His love and passion for cooking slow is representative of the Lowcountry culture and flavor. This is not fast food: it’s slow cooked for at least 12 hours and we benefit from his passion.
The history behind Ted’s business goes back to October 2005 when he did a benefit for the Frazier family following Oscar Frazier’s death in August of that year. Oscar was the Bluffton Mayor Pro Tem, a true leader on the Town Council and he opened Oscar’s BBQ in 2004. Ted wanted to do something that would show his respect and love for Oscar and acting from his passion for food, Ted did what he loved best....prepared BBQ. Oscar’s partner asked if Ted wanted to take over Oscar’s business and the rest is history.
The move to the new location in October 2009 provides ample apace for indoor dining with plans for outdoor tables in the near future. Locals and visitors alike have come to know the results of Ted’s love of cooking slow. ‘Good BBQ is seven days a week but great BBQ takes love.’ Using his own perfected blend of dry-rub seasonings, Ted’s vision was to create what he refers to as ‘30 mile barbecue’ – pork so good people are willing to drive 30 miles to get it. Trust me when I say he accomplished his vision.
Ted has garnered significant praise for his passion and two years running (November 2008 and 2009) was selected by Tyler Florence, Food Network Celebrity Chef as one of the Master Chefs to participate in Tyler Florence’s Palmetto Bluff Lowcountry Celebration, ‘Music To Your Mouth’ presented by Coastal Living Magazine.
You’ll like the look of this new venture that Reclamation By Design owners Ron and Pat Strimpfyl and Jim Johnson have created. Along with Kevin Grenier, KRA architect; Kelly Graham who painted the signs, and Donna, Ted and son Will they each have contributed to the overall design that incorporates so many warm and inviting elements. Almost all the special touches were given by friends. Ted is so appreciative for the unbelievable support he’s received from local friends, extended friends and family. In hearing Ted express his thankfulness, you’re aware that there is a debt of gratitude that words cannot adequately express.
Although I’m partial to the Pulled Pork which generally I order as a BBQ Sandwich, The ribs are wonderful. Recently I ordered a Half Rack of slow-cooked Ribs to go and shared them with my buddy Marcia Handel. She expressed how meaty and tender they were and especially how much she likes Ted’s sauce. The Pulled Pork can be ordered also as a Sandwich Plate, Pork and a Fork and other variations, and you can order by the half or full pound with extra sauce. Barbecue sauce is a favorite way to enhance the flavor of foods and Ted’s sauce is always a favorite. It’s now available for purchase.
For this review I ordered a Half Chicken; a smoked, delicious chicken that is also a big favorite with children. I love Ted’s homemade Cole slaw and Brunswick stew and chose them as my two side dishes (there are many other selections). The afternoon was cold, damp and rainy and my selections were perfect comfort food. The Brunswick stew is made with chicken, beef and BBQ pork and truly is delicious. It was hot and very flavorful. You may want to try the Working Man’s Special, served from 11am -2pm, Special Plates and more.
