Sophies Choice Cristalino Cava Brut Sparkling
Spain NV
(Wine & Spirits Value Brand of the Year 2003)
hen you think of December you think parades, oyster roasts, Christmas, and the New Year. Why not make this sparkling wine your choice for all of the above. Cristalino sparkling wines are produced by Juame Serra, a winery located in the Penedes region and founded in 1943. Wine making began on this property in 1847. Their style is made by the same traditional method as they do in France to produce Champagnes. The only reason it is not called champagne along with every other sparkling wine is that it is not made in the Champagne region of France, shame on them. This sparkling wine will not only impress your dinner guests, the price tag is very friendly for the amazing wine you get. Straw color, smooth and fresh aromas; fine and fruity palate with a dry aftertaste. Clean, dry and crisp with citrus and apple flavors. Sorry, I hate when I do that. When celebrating with your friends and family during the holiday season, pop open a few bottles of Cristalino and welcome the New Year. Remember whatever bottles you dont drink you can enjoy them in a nice Mimosa to ease the pain the next day, I highly recommend doing this. Happy Holidays and have a happy New Year!

Sophies Supper Chicken
This recipe is quick and easy and looks very swish on a plate. Chicken breasts are on sale quite often, so this wont break the bank.
6-bonleless/skinless chicken breasts.
1-tub of craft whipped
cream cheese with chives.
3-tablespoons chopped green onions, mix with the
cream cheese.
6-slices bacon.
Pre-heat oven to 400 degrees, pound chicken to about 1/2 inch thick pieces. Spread cheese mixture on each piece of chicken in a thin layer. Roll chicken up like a cigar and wrap bacon slice around each piece. Secure w/toothpick if necessary. Place on a greased cookie sheet and bake for about 20 minutes. Turn on the broiler and broil bacon crisp, be sure to turn them under broiler as needed. Serve with cauliflower that has been steamed, wild rice and french bread. A pinot gris is a good wine with this dish.
